This is my new favorite food. Starch? Carb? You know what I mean.
I love carbs. And sugar. And pretty much anything unhealthy for me if I’m being 100% honest. For most of my life, I’ve just eaten what I want when I want. Recently, as a collegiate athlete, I’ve gotten tired of feeling groggy, of the stomach aches and bloating. Whether I’m competing or not, I want to feel and look my best. For me, that starts with a healthy, energizing breakfast.
While I refuse to swear off carbs or sugar, I’ve been looking for ways to satisfy my cravings in a healthier way. Recently, I’ve discovered the magic of sweet potatoes. They’re a complex carb that are surprisingly versatile. Just look at the pros:
Sweet potatoes might not be the cheapest ingredient, but I love that to prepare these dishes, I used ingredients I already buy every week- almond butter, eggs, almond milk, fresh fruit- so you won’t need to revamp your pantry! Plus, they easily can be roasted or baked for healthy dinner and lunch options. Anyway, let’s get to the recipes!
Sweet Potato Breakfast Bowl
Again, I basically swapped sweet potato for the more conventional acai bowl or even oatmeal. This is a great way to switch up your breakfast routine without going too out of your comfort zone. I combined a few recipes for this one (scroll all the way down for links), but mostly eyeballed it. While I baked the sweet potato for 35 minutes on 400 degrees, you can also just poke some holes in it with a fork and stick it in the microwave for 3 minutes if you’re low on time! Then just peel and blend with almond milk and almond butter. I added cinnamon and a dash of vanilla for sweetness plus some protein powder to get some much needed protein! Pro tip: use half a sweet potato for one serving because a full one had me bursting but still so good! I topped with my favorites:
